Pancake Recipe (psst it works Gluten Free too!)

I’m deviating a little from my usual jewellery and craft related posts today to share a divine gluten-free pancake recipe.  Now I know this may seem a little odd for those that haven’t met me in person, but as a Coeliac (basically – someone who has an auto-immune reaction to  gluten and therefore can’t touch the stuff), when you find a really great recipe that works and looks/tastes as good as non-gluten food – my god, you shout it from the rooftops!!
This ‘normal’ recipe came to me courtesy of my 7year old son who had a library book about a pancake chef and at the end of the book was a pancake recipe (I will track down this book and add the credit here soon).  My son begged me to make these pancakes the next night for ‘dessert’, so I simply substituted gluten-free flour and both sons and my husband LOVE them (we now have them about 3 times a week!)
·         1 cup gluten-free flour (I use Horleys but Bakels would be fine too, or any GF flour with a high maize flour content)
·         1/8 teas salt
·         1 lightly beaten egg
·         ¾ cup milk
·         A little water
Sift the flour, add the salt.  Combine the milk and egg.  Add the wet ingredients to the dry and whisk till no lumps.  Add water to get the consistency you prefer and cook in batches (size is at your discretion) in a hot pan.  Again, I deviate here and use our Kambrook sandwich press greased with rice bran spread (butter’s fine).

My family literally scoop these off the press as soon as they’re cooked meaning I often miss out but if I do manage to save one, my fav toppings are butter and black doris jam, a scoop of icecream and strawberry topping, golden syrup, or a squeeze of lemon juice and a sprinkle of sugar.

  1. Sounds delish Mel! I knew your craft skills would extend into other areas. ;D I'm also gluten free - but can't have corn either so I steer from GF flours. Also dairy free and vegan! But your pancakes look real yummy...

    I'm always on the look out for GF recipes for my coeliac friends. And what a brill idea to cook them on a sandwich press :-)

  3. Perfect timing! I just got out my coeliac prescription form today, and started to fill it in. Will add the Horley's baking mix on. I usually use the Healtheries Simple one which is rice flour based. So I will definitely try them once that arrives. The sandwich press idea is brilliant. I wonder if that will work for making tortillas as well? I tried making them once, I think they take a lot of practice.

    I take it you've tried my bread recipe! I keep thinking I should try some others to mix it up, but it's just so good.

  4. I've been doing a wheat-free pancake with oats and spelt. My tummy is much happier with me if I don't eat regular wheat flour.
